Puffed polenta and creamed salt cod
Brioche bread, butter and anchovies from the Cantabrian Sea
Ocean yellowtail tartare, green apple, celery and chives
Lobster in fennel and crème fraîche sauce
Risotto with rock fish broth, scallops and Garda lemon scent
